Pienza is famous for being the “ideal city,” commissioned by Pope Pius II in the 15th century as a perfect example of architectural balance. Pecorino di Pienza is a cheese made from the milk of local sheep, raised in a semi-wild state and fed on herbs rich in the typical aromas of the Val d'Orcia. This gives the cheese unique aromas and flavours. There are several versions:
